I recorded a video on how I sculpted the Old man bust in ZBrush https://youtu.be/ycwv1jQnEqQ Morning warm up sculpt, trying new styles and techniques with different facial expressions and emotions. Feel free to download this model and use it in your personal projects. This was sculpted in ZBrush, I usually start with a base mesh for most of my sculpts if you would like to grab that mesh you can find it here.
